White beans are seeds of the garden bean (bot. Phaseolus vulgaris). Garden beans are pure cultivated beans, presumably derived from South American wild forms. There they were already known 6,000 years B.C. and for a long time one of the most important staple foods. Beans are of great importance as useful plants. Especially in the poorer countries they were essential for survival as a source of protein for the basic supply of the population. For a long time, white beans were also considered by us to be a cheap food, which came to the table more out of need than out of enthusiasm. The high nutritional-physiological value of the white beans was recognized long ago also with us. Last but not least, the followers of wholefood cuisine, vegans and vegetarians made the bean acceptable again. Even star chefs have taken care of them. They conjure up exciting side dishes and meals from the beans. Nutritionists are also convinced of the legumes. With their valuable minerals such as magnesium, phosphorus, calcium, potassium and iron, they contribute significantly to the supply of daily needs. White beans also have a high vitamin A content. This vitamin contributes to the function of vision. It supports the metabolism and is important for the structure and preservation of skin and mucous membranes.
Use
White beans are the favorite of savory soups and stews. Depending on the desired firmness, they give these dishes a creamy consistency or a savory bite. White beans are an indispensable ingredient in typical country dishes such as French cassoulet or Italian minestrone. Italians in particular love the pale legumes because they are an ideal partner for aromatic tomato sauces. They are served with spices such as sage or are cooked in red wine. The English even appreciate white beans for breakfast. There they are together with bacon and toast morning national dish. In the wholefood kitchen, beans complement vegetable dishes such as green beans, lentils and tomatoes. White beans make a tasty puree that goes well with sausage and meat.
