Use
Organic coconut blossom sugar has a similar sweetening power to white sugar. A 1:1 exchange is therefore possible. Organic coconut blossom sugar makes particularly good in creamy desserts, smoothies and other desserts. Since it is taste-intensive, a smaller quantity than white sugar is sufficient for a pleasant sweetness. As a sweetener for coffee, cocoa or tea, it gives beverages an interesting flavour. Organic coconut blossom sugar is also becoming increasingly popular in fruit salads, jams, fruit preparations and cocktails.
Production
The locals in Southeast Asia recognized the sweetness of the escaping juice early on when the flowers and inflorescences of the coconut palm (Cocos nucifera) were damaged or pruned. The farmers made use of this advantage. They specifically extracted the nectar, caught it with bamboo pipes and cooked it at home. Little has changed in this traditional method to this day: In order to get the juice of the coconut palms, the flower buds are cut. The escaping coconut nectar is collected and boiled down until the liquid evaporates and the sugar crystallizes. In order to preserve it, it is dried. Sieved and selected by hand, our organic coconut blossom sugar is then packed and shipped. Coconut blossom sugar has long been known in the home of coconut palms. The indigenous people of Indonesia, Thailand and other Southeast Asian regions, but in South America, appreciate it as their main sweetener. Coconut blossom sugar consists mainly of sucrose. This in turn consists of the natural components fructose and glucose.
Origin
We buy our organic coconut flower sugar from Southeast Asia, especially from Central Java.
Sustainability
Natural palms, cultivation methods that protect the rainforest and the fact that no coconut palms have to be felled for harvesting conserve the environment and resources. Coconut shells and palm leaves are used for soil improvement and fertilization. An artificial fertiliser and pesticides are not used in cultivation. The long yield period of more than 70 years contributes significantly to sustainability and creates a regular income for the families of the small farmers.
Harvest
The continuous harvest, which has taken place over three generations, speaks for our organic coconut blossom sugar. The coconut nectar can be collected twice a day in cultivated plantations. This is still done manually. Many of the small farms are purely family businesses: the men are responsible for collecting the nectar, the women cook it.
Flavor
Even if its name does not suggest it, coconut blossom sugar lacks the typical coconut taste. The light or medium brown crystals taste like caramel, with a light malt note. It is mild and does not impose itself despite its aroma.
Yield
Up to two liters of coconut nectar can be extracted daily. This results in about 250 g organic coconut blossom sugar. This makes up an astonishing amount of around 90 kg per coconut palm all year round.
Special feature
Organic coconut blossom sugar, unlike white sugar, contains micronutrients. It cannot compete with other foods such as fruit and vegetables in this respect. However, it has more potassium, zinc and iron than other sugar alternatives. Even the valuable inulin is found in organic coconut blossom sugar. Inulin contributes to a healthy metabolism and supports the intestinal flora.
