In the pumpkin, the largest berry in the world, botanically speaking, between 500 and 1000 of the crunchy seeds can be found. “Shine skin” belong to the group of coated pumpkin seeds. Their shiny surface gave these varieties their name. One of their main cultivation areas is in China, but the increasing demand means that they are cultivated in all suitable regions. Shine skin are characterized by relatively large kernels. This variety is also rich in valuable ingredients. Pumpkin seeds provide a high proportion of easily digestible vegetable protein. On average, 24.4 g are contained per 100 g of seeds. This makes them a valuable component of vegan and vegetarian cuisine. More than half of their 45 g fat are polyunsaturated fatty acids. These fatty acids are said to have a positive influence on the cardiovascular system, cell renewal and the brain. An above-average amount of magnesium can also be found in the seeds. The 402 mg contained in 100 g pumpkin seeds cover the entire daily requirement of an adult, which is specified by the German Nutrition Society (DGE) as 300 to 400 mg. Only in the last twenty years have pumpkin seeds developed into a popular snack and kitchen ingredient. In the Orient, on the other hand, they have been appreciated for quite some time. There, the nutritious kernels are nibbled from the shell or roasted.
Use
The light green Shine Skin is not to be missed in the bakeries anymore. They taste just as good in bread as on top. Pure, salted and roasted they are a popular change in party snacks. Organic pumpkin seeds are as pretty as they are delicate ingredients for fruit salads. In the so-called salad seeds, mixtures of various nuts and seeds as salad topping, pumpkin seeds are particularly in demand in full-fledged, creative young cuisine. They are suitable as an ingredient and decoration for soups. Vegetable dishes and rice pots are complemented in taste by their nutty aroma. Muesli mixtures, nut bars, sweet and salty biscuits taste even better with them. The green seeds are also popular in chocolate and confectionery in every respect.
