Sesame, black
Black sesame is considered to be a primordial form of sesame. It is the closest to the wild varieties. The black seeds have been used in Ayurvedic medicine and cooking for thousands of years. Like the light variant, black sesame is rich in valuable ingredients. Easily digestible protein, fibre, around 50% oils and unsaturated fatty acids make organic sesame a wholesome food. The mineral content is just as remarkable. Selenium, zinc, magnesium and calcium, potassium and sodium are contained in the black seeds. They are therefore said to have the health benefits of its ingredients. But this is not the only reason why sesame seeds are so popular. Its exotic appearance and spicy earthy taste make black organic sesame a popular ingredient. We source our organic sesame from Paraguay, where it is produced in certified organic cultivation projects. We are committed to fair trade, so that local smallholders can increasingly make ends meet by growing sesame.
Use
The nutty, earthy aroma of the black sesame is intensified during roasting. It is well suited for baking, where it gives bread a loose consistency. Sprinkled on baked goods, it provides a typical flavour: Turkish flat bread would only be half as good if the black seeds did not exist. Turkish cuisine also produces dumplings filled with minced meat or sheep’s cheese seasoned with sesame seeds. In Asian cuisine it is a component of many dishes, here it belongs to vegetable dishes, rice and noodles. The modern full-fledged kitchen also enjoys the black sesame variant. Potato dishes are seasoned with sesame and bread spreads are refined with it. Black organic sesame is an exciting topping for salads and fruit. The contrasts between the spicy grains and apricots or mangoes result in an interesting taste combination.
